Tim’s Favorite: Game Meat Stew (Wildsvleispotjie)

A rich, slow-cooked game meat stew infused with warming spices like cinnamon, nutmeg, and cloves, simmered with red wine and vegetables for a hearty, comforting meal. A gourmet quality dish.

 4 tsp Olive or macadamia oil
 8 Pickling onionschopped
 100 g Mushroomschopped
 750 g Game meatcut into cubes
 Flour
 4 Lean back bacon stripschopped
 2 Carrotspeeled and chopped
 1 Celery stalkchopped
 1 tbsp Dried parsley
 2 Bay leaves
 1 tsp Dried thyme
 1 tsp Cinnamon
 ¼ tsp Nutmeg
 2 Whole cloves
 ¼ tsp Cayenne pepper
 8 Baby potatoespeeled and cut into quarters
 ½ cup Red wine
 ½ cup Beef stock

Heat half of the oil in the pot/casserole. Sauté the onions until browned, remove and set aside. Sauté the mushrooms in the same pot/casserole, remove and set aside.

Sprinkle the flour lightly over the meat cubes. Heat the remaining oil in the pot/casserole and brown the meat. Remove and set aside.

Fry the bacon in the pot/casserole, then add the carrots and celery and fry for another 3 minutes.
