Delicious Cabbage Dish by Leon Vermaak

A creamy, cheesy baked cabbage casserole with sweetcorn, bacon and a hint of nutmeg, finished with golden melted cheddar on top.

 ½ Cabbage headfinely sliced
 1 Onionfinely sliced
 ¼ tsp Nutmeg
 Salt, aromat and freshly ground black pepperto taste
 1 ¾ cups Cheddar cheesegrated
 3 Eggsbeaten
 1 cup Milk
 1 tbsp Flour
 1 tbsp Butter
 ½ cup Frozen whole kernel corn
 4 Fully cooked bacon sliceschopped

Cook the cabbage in salted water for 5 minutes and drain well.

Fry the onion in the butter until lightly browned.

Mix the cabbage, 1 cup of the grated cheese, corn and fried onion, and spoon into a greased ovenproof dish.

Beat together the remaining ingredients, except for the ¾ cup of cheese, and pour over the cabbage mixture.

Sprinkle the remaining cheese on top.

Bake for 30–45 minutes at 180°C, or until golden brown and set.
