A traditional South African-style pickled curry fish made with fresh stockfish, tangy vinegar sauce, and layers of onions, best served chilled on fresh bread.

Cut fish into chunks and sprinkle with fish spice and salt.
Place water, vinegar, sugar, and onions in a pot and cook for 15 minutes until onions are glassy.
Roll fish in flour and place in a dish.
Add spices to the vinegar mixture in the pot and cook for a further 15 minutes. Taste for sourness and sweetness and adjust as needed.
Thicken the sauce with flour mixed in water.
Fry fish in a pan with oil until light brown on both sides.
Place the cooked fish on kitchen paper to absorb excess oil.
Layer onions in a glass dish, place a layer of fish on top, and repeat with another layer of onions and fish.
Pour the remaining sauce and onions on top and let cool.
Store in the fridge for 24 hours.
Serve on fresh bread with salad, or just as you like it! There should be extra sauce remaining – store in the fridge and add the remaining sauce to the fish mixture once the first serving is taken. Alternatively, use a bigger dish!
