Saag Paneer (Spinach Curry with Paneer or Chicken)

A rich, creamy spinach curry infused with warm spices, coconut, and tender paneer or chicken, simmered to smooth perfection.

 1 tbsp Cumin seeds
 1 tbsp Garlicminced
 1 tbsp Gingerminced
 13 Chilliesoptional, or use chili flakes to taste
 2 Onionsdiced
 2 tsp Saag paneer spice or garam masala
 1 Tomatoescanned, diced, or 3 fresh tomatoes diced
 ½ cup Desiccated coconut
 750 g Frozen spinach3 bags
 300 ml Cream
 300 g Paneer or chicken

Heat oil in a large pan, add cumin seeds and cook for 1 minute.

Add minced garlic, ginger, onion, and chillies to the pan, cook for 5 minutes or until onions are translucent.

Add the spice mix and cook for 1 minute, then add tomatoes and leave to simmer for 5 minutes.

Add coconut and leave to simmer for 5 minutes.

Add spinach, and once combined, blend the mixture until mostly smooth using a stick blender, food processor, or blender.

Once blended, add the cream.

Slice the paneer into squares.

Cook the paneer in a pan until lightly golden, then add it to the spinach mixture.
