Pickled Onions (for Fried Fish)

A tangy, spiced pickled onion relish infused with fish masala, garlic, and bay leaves — perfect served over crispy fried fish, rice, or mashed potatoes.

 12 Large onionspeeled and sliced
 2 l White vinegarblended
 6 tbsp Fish masalalevel
 2 tbsp Dhania and jeera powderlevel
 2 tbsp Black peppercornslevel
 2 tbsp Crushed garlic
 3 cups Sugaradjust to personal taste
 4 tsp Turmericlevel
 4 tsp Saltlevel
 20 Bay leaves

Peel and cut the onions into slices.

Microwave the sliced onions in portions for 10 minutes each.

Place the microwaved onions into a large pot and add the 2 litres of white vinegar. Bring to a boil and cook for 25 minutes.

During this time, add the fish masala, dhania and jeera powder, peppercorns, turmeric, salt, and bay leaves, followed by the sugar and garlic.

Taste while cooking, and at the end of the 25 minutes, adjust the added portions according to personal taste.

Switch off the stove after 30 minutes total cooking time and leave to cool.

Once cold, place the pickled onions into plastic freezer bags (2 soup ladles per bag) or spoon directly over fried fish in a deep bowl.

This recipe fills approximately 4 freezer bags (23cm x 25cm); each bag is enough to cover 2 pieces of fried fish.

The pickled onions can also be used as a topping for rice or mashed potatoes.
