A traditional South African mutton stew made with tender waterblommetjies (water flowers), apple, and potatoes, slow-cooked to perfection and finished with a hint of nutmeg. Waterblommetjies can be replaced with green beans.

 2 kg thick ribs of muttoncut into bite-sized portions
 2 tbsp olive oil
 2 onionsfinely chopped
 1 sorrelchopped, one bunch
 1 cooking applelarge, sliced or grated
 1 cup white wine
 2 tsp salt
 2 potatoesmedium-sized, peeled and cubed
 freshly ground black pepperto taste
 3 waterblommetjiesthree bunches
 nutmegfreshly grated

Rinse the waterblommetjies (or green beans) thoroughly in salt water.

Season the meat with salt and pepper.

Brown the onions in a heavy saucepan.

Add the meat and brown together with the onions.

Add all the remaining ingredients except the waterblommetjies and potatoes.

Cover and simmer for 2 to 2.5 hours or until the meat is tender, adding more water if necessary.

Add the potatoes and waterblommetjies for the last 25 minutes of cooking time.

Grate nutmeg over the dish before serving.
