 1 kg Ground beef or lamb mincelean
 2 Onionsmedium, finely chopped

 2 White breadslices, crusts removed
 1 cup Milkdivided for soaking and topping
 2 tbsp Curry powder or pastemild
 0.50 tsp Turmeric
 2 tbsp Fruit chutneysuch as Mrs. Ball's Chutney
 1 tbsp Apricot jam
 0.50 cup Raisins or sultanas
 1 tbsp White vinegar or lemon juice
 1 Green applelarge, grated, optional, for moisture and tartness

Soak the bread slices in a shallow bowl with half a cup of the milk until soft. Squeeze out the milk (reserve it for the custard) and mash the bread well.

Sauté the chopped onions in oil or butter until soft and golden. Add the garlic, curry powder, and turmeric, cooking for another minute until fragrant. Add the minced beef and cook until browned, breaking up any clumps.

Stir the mashed bread, chutney, apricot jam, raisins, vinegar (or lemon juice), grated apple, salt, and pepper into the beef mixture. Simmer for 5 to 10 minutes.

Transfer the meat mixture into a greased ovenproof baking dish and press it down smooth.

Whisk the eggs, remaining milk, and a pinch of salt together. Pour over the meat base, top with fresh bay leaves, and bake at 180°C (350°F) for 35 to 45 minutes until the custard is set and golden.
